see i'm writing this on your profile so you can see it and shit. yeah, fermenting cabbage's awesome if you know what you're up to. i'm having some mates over for christmas day - first time ever. creamed savoy with garlic, chestnuts and pancetta will be done.

wow it's really good. tastes and looks more like kimchee than the cabbage pickle i've had at my local restaurant, but it's good and you can definitely taste the fermentation.
