the word "theory" does not imply truth or myth. a theory is simply an explanation for physical observations. there is a theory of gravity, a theory of cell biology, a theory of evolution, etc. the "theory" part simply denotes an explanation. a theory can be true or false.
whether or not they have been rigorously tested is subjective to the layman. in evolution's case, it's difficult to tell whether or not the theory of evolution has enough evidence to be considered true. some need more definitive evidence than others. most evidence, although quite abundant, is somewhat indirect. That's why some reject it and some do not. For the theory of gravity, the evidence is quite clear as we can reproduce the proof at a moments notice.
