It's best to run. Even trying to kick the knife out of their hand is a mistake. If you mess up or they somehow cut your leg real bad, now you've not only made them angry, but you can't run away because your leg is messed up.
Although stupid, here's a good example of why the "disarming techniques" aren't applicable to real life situations:

there is a very good chance you will get cut, no matter the training. It's about limiting or controlling the area of the strike..

Kali, Silat, and Krav Maga are styles that deal quite a bit of knife defense. If you are interested check out one of those.

The myth/problem is the % of utility in disarms. +1 per usual for Halls 'n Friggintitsman (both of who I'm thinkin' are travelin' in some similar circles, but I digress...) on the suggestions related to escape, control of the tool, usefulness of FMA/Silat ideas, monitoring and such.
Everyone oughtta have principles for disarms- going against the thumb, using the tool against the "opponent", using the environment and such. More important though, I think, are escape ideas and work, use of "distractions" or "softening", shoulder/hip stops/eye or throat jabs combined with baseball bat grips (or transitions), and working from there.
Many knife attacks are "surprise" attacks to begin with. So have to learn to deal with those. Often people don't realize they've been knifed until after the assault. Also have to learn tool access, fouling/dealing with fouls...
What I'm getting at is that there's a lot of material to learn that's arguably more relevant than working on disarms, and there's some examples.

Flexibile weapons are the shit for defense against knives. They are not illegal and can be carried anywher. A handgun is great, but there are many places that you cannot or should not bring them.

Legality: not true in California. Chucks? Flail? Chain whip? Maybe a garden hose or belt could be gotten away with...
Also, they're not always the best defense against knife. Saw a cat go against a guy with a bullwhip recently (weird enough to begin with). Anyway, dude had a stick and knife thing going on. Dude closed the distance, pwn3d the guy with a whip. Just as an example. Me? Jesse Owens, or projectile weapon against knife.

With a bullwhip (Latigo) you have to have precision in strikes or espada y daga will close the gap easlily. But I'd use a Sibat (staff) all day against knife, or stick.
A longer weapon can hold off an opponent if used correctly. But if it isn't the shorter weapon will win everytime.
