True. I think it is actually due to the crazy high level of salt in everything. Can't find a reference for that but read a pretty reliable sounding article about that once. Soy sauce is frikkin liquid salt concentrate.

Pretty good actually. Places I've been seem to have two basic "types" of whalemeat: one is almost all blubber I guess. Not real soft like beef fat... it's kind of weird, almost like a chewy "fat jerky" kind of thing. The red meat part is a bit denser, darker kind of red meat than beef.
