If you have itunes on the computer you can plug your ipod in and see and listen to the songs on your ipod through the computer. But you can't take them out of the ipod and put them on your computer. It only works the other way around.

nope, songs have to be on your hardrive in the first place to actually "exist" on the comp
to listen to them though, you can rip them from cds onto your comp, an mp3 cd can have like 120 songs

You can delete songs from your ipod using itunes, and you can add new songs. Sounds like you just need to organize your shit and use itunes a little more to get the hang of it.
Dude, it's not rocket science. Everything works great for me and my video ipod rules. I've got music, TV shows, movies, books - I can convert any video format no problem. I put MMA hightlights in it and I put lectures, study guides, and slideshows in it for school.

Yes but you must admit, although NOT Rocket Science, Itunes software in also not very user friendly. It's like a visit to prison.

enable Drive Access (can be done in iTunes) for your iPod. next time you connect it it will show up like a removable drive. in the drive will be a folder called Music that will have some kind of convoluted directory structure under it with all your files (they will be named in some similiarly fucked up manner). copy that shit over. then get some kind of MP3 tag program to rename the files so you can actually tell what is what.
