Alison Krauss & The Union Station - anything by them
Bela Fleck - not really country but he has roots in bluegrass and will expand your mind
Clint Black and Friends - "Same Old Train", I think most of his stuff is crap but this is nice
Emmy Lou Harris - stick to her first 3 albums if you can, more folk-style but awesome.
Gillian Welch - pretty much anything
Jack White from Cold Mountain soundtrack - "Great High Mountain" & "Never Far Away"
Jenny Lewis
Jessi Colter
Waylon Jennings
Loretta Lynn's new album with Jack White
Neko Case (semi-country, off the beat)

Ry Cooder (has some country but is similar to Bela Fleck, will expand your mind)
Shelby Lynn
Stephen Stills
The Be Good Tanya's
Nitty Gritty Dirt Band (look for their Circle Sessions, but anything by them is good)

That's my extent of country... if you're going buckwild and downloading everything in sight, try and find 2 albums; "White Mansions" -- it's a civil war country opera and is amazing and "The Legend of Jesse James" which is primarily Waylon Jennings with a ton of other musicians.
