Render off some bacon, real bacon not canadian bacon, then sear the beef in the bacon fat.
Next dump in some diced 1"x1" carrots and onions, plus some whole button mushrooms and a whole bottle (750ml) of dry red wine, preferably a Burgundy (boxed is fine).
Put in a few whole pepper corns, a bay leaf, some thyme sprigs, and some parsley stems.
Bring to a boil then reduce to a simmer (lazy bubble every few seconds) for 1-3 hours, until meat is fork tender.
Season with salt and pepper to taste.
