Thier sound did indeed change, but thats not the issue. Did thier sound change as a result of them wanting to cash in on what was currently popular, in an obvious attempt to become richer and more famous? Or was thier sound change a result of matured song writing and personal evolution beyond thrash ****l? There isn't anything wrong with evolving your sound, in fact I think its great, I dispise bands that sound the same album after album, it becomes very redundant and old.
So if M e t alica's sound changed after the Black album in an experimental/evolutionary sense I can't see why people would call them sell-outs. But if they changed thier sound to fit in with a younger hip radio friendly crowd, then yes they are sell-outs.
I'm not a big follower of M e t allica, never have been, I just haven't been able to get into thier music, but from what I can tell I'd say they experimented with a sound change on the Black Album, and once they discovered how rich they could get by calming down, and shortening thier songs they just ran with it. I would like to say that Load and Re-Load were a result of matured song writing and evolution, but you can't expect me to believe they wrote lyrics like "Gimme Fuel, Gimme Fire, Gimme that which I desire!" while trying to push thier artist integrities forward.
So like I said, I think the Black Album was an honest album, while everything after that was cashing in on what they discovered with the Black Album.
