Action Adventure: Prince of Persia serie
RTS: Starcraft
Japanese RPG: FF8
American RPG: Diablo 2
MMO: I've only played FF11 and WoW, both took way way too much time to play, and enjoyment lessened as one gets deeper into it and it feels like work. To break it down really simply, FF11 is less complicated in terms of tasks, but incredibly difficult to complete it. WoW has a more complicated task, but the individual tasks are easier to complete.
FPS: Single Player: Doom, Multiplayer: Counter strike
Tycoon game: Transport Tycoon (came out on 2 floppy disk, and addictive and interesting as hell, graphic was way way ahead of its time and just hours and hours of fun)

Simulation: The Sims 2
Platform: Really a toss up between SMB3 or Super Mario World. Love both.

Played KoTOR and the sequel, I think in that genre, Mass Effect is right up there with it. I can't pick a clear cut winner. But Jedi is too unbalanced in the game, the best team = 3 Jedi together... whereas Mass effect's team choice is a little bit more interesting in that play style will determine which characters best suit you rather than the innate qualities of the characters.
