I heard rumors that it was the Riddler. I don't remember anyone mentioning Edward Nigma though...

The story changes because, thematically, the origin story isn't important. It changes as a way of demonstrating the Joker's world view without stating it outright. From the Killing Joke graphic novel:
"All it takes is one bad day to reduce the sanest man alive to lunacy. That's how far the world is from where I am. Just one bad day. You had a bad day once. Am I right? You had a bad day and everything changed"
The details of the bad day are, to the Joker, trivially unimportant: all that matters is the fact that it just takes one to wipe away all our cherished notions of civilization, of sanity, and of order.

Not quite. The Joker doesn't have a origin and is just insane and that is why the story is always different. I thought this was clear and pretty straight forward especially after he was in jail and they couldn't find any finger prints or any history of him

From what I read else where. As the Joker character progressed, different comics would indicate different origins. The Joker would reference this later stating that he wasnt quite sure himself. Hes just truly insane.
