I was a PoliSci major planning to go to Law School, got a job with a NASA contractor while waiting for the next semester.
Never ended up going since I started making $$ and was kind of burned out on school.
Teaching, law, trying to get a job with the State Department are a few choices.

I am a Polt Sci grad that was also planning on law school. Somehow I wound up doing accounting in the mean time and liked the money I make doing accounting (posting on Sherdog) so I havent gone back.

Currently finishing up a degree in it this year. Going to look to work with either the federal or provincial (equivalent to the state government in the US) here in Canada, with a focus on something related to foreign relations. I toyed with law school, but I just figured after talking with friends who are in law, its just not for me. Would rather continue to work in something related to international relations.
All I would say is dont let your marks slack. Employers know that there are a number of grads with similar Arts degrees to choose from year after year. Because of that, if you have good marks, it tells them that at least you are responsible and a good learner and thus will be willing to take you on. From then, its all about being able to sell yourself whether its your work experience or ability to communicate/interpersonal skills.

I'm a political science student, no idea what I'm going to do, toying with joining the police or something, maybe teaching but those are just vague ideas.

I am a Poli Sci major in an International relations Emphasis.
One year left before graduation, considering Law School or an MPA after graduation.
Their are plenty of opportunities for Poli Sci majors, dont let anyone tell you different, especially if you want to work in government.
However, just like with any degree it will be the graduate education that makes you truely marketable. go to USAjobs.com and see the vast number of federal government jobs requiring 4 year in poli sci (or other related fields) and notice that some are starting at 70+

I got a BAs in Poli Sci and Psych. I always knew I wanted to go to law school, so I majored in Poli Sci because they were related and I was interested in the subject matter. All the Poli Sci, and the people who talk nothing but politics really burned me out on the whole political process, though, and now I refuse to even vote.
