Olympic caliber? Did hughes ever even win US nationals?

Arona is unbeatable in ADCC which although not Olympic level competition, is much more relevant to MMA IMHO.

Hughes is a college division 1 four time all american i think thats pretty decent but maybe thats just me...

According to the Matt Hughes website....

Today is April 24th and I'm 192 pounds, on May 27th I've got to be 175. A week away from the fight I like to be no more than 10 pounds over. I just lose water weight in the last week. -Matt

So it sounds to me like he loses roughly 10 lbs in water weight which is what he gains back (maybe a little more) by fight day.
