in k-1 you can't throw more than one attack after clinching, you can't throw elbows,

" No grabbing too much ok ? "

You can't catch the leg and sweep it. Some fighters still do but they get warned.

blocking a kick with your arms, but still taking damage, in k-1 is considered a block... blocking a damaging kick with your arms in MT is considered damage and the attacker gets points

unlimited clinching in MT as long as you stay busy... only one attack in the clinch in K-1

The main differences I can think of:

MT: 5 rounds / K-1: 3 rounds + extra rounds if draw after 3
MT: elbows allowed / K-1: elbows not allowed
MT: certain throws allowed and scored / K-1: no throws of any kind are allowed
MT: clinching allowed as long as there is action + multiple knees allowed / K-1: prolonged clinch not allowed + single knee only
MT: damaging kicks to the arm score / K-1: arm not a scoring target
MT: falling to the ground on purpose or turning your back to your opponent is considered a foul / K-1: never seen anyone warned for either

Other differences:

You don't see it written in the rules but K-1 judges (almost always) prefer boxers - low kicks and middle kicks especially seem to matter less than punches. In MT it's the opposite: kicks tend to get scored better than punches.

Both sets of rules have high regard for the aggressive fighter but MT judges also consider 'style', favoring the fighter who shows better MT technique (nice counters score well, for example).

In MT, a fight can be stopped if a fighter is being completely outclassed.
