A 27- 2 - 1 Draw record is ridiculously impressive in K1. It should have been 28-1-1 because that loss against HMC was a hometown bullshit decision.

Actually he's 30-0, which means that he's undefeated in K-1, yes that's damn impressive. In boxing you can find those records ... by they are obtained by fightig record building cans. Schilt fought everybody, including the best.
Regarding his record; 30-0; Hoost was lucky to get a draw the first time they fought and Aerts didn't beat him but only won because Schilt was given I beleive 3 yellow cards in the final round.
The keys for his success are his height and reach combined with his tremendous stamina and workrate and dedication (no smoking, drinking... ).
They only nagative point that can be made is that all the best fighters (Aerts, Le Banner, Hoost ) were past their prime when they faced him.
