A few additions:
Matt "The Hammer" Hamill got his nickname after wrestling in a match for a deaf audience. Hamill slammed his opponent on the mat, and some people from the audience indicated that the slams felt like a big hammer striking down on the mat.
Pete Spratt is "The Secret Weapon" because he was utilized by small promoters earlier in his career as the so-called "secret weapon" to rouse excitement in the crowd. His style was engaging to the audience.
Tony DeSouza is often called "Mendigo" in Brazil, which means "the beggar" in Portuguese. Brazilians noticed that DeSouza fought with cheap fight trunks and had a full beard; he earned the nickname which is still used informally on some Brazilian mixed martial arts websites.
Paul Buentello got his nickname, "The Headhunter", because he would always aim for the head in martial arts matches.
James Irvin is called "The Sandman" because, as a football player, he once tackled someone unconscious. This nickname has stuck with him ever since.
