Fight purse in UFC

I still don't understand why the UFC and other fight orgs are using the contract method. You sign a guy for a few fights, he wins the belt, and then his contract ends and you either have to sign him to a big contract or he goes somewhere else and leaves the belt vacant. If you resign him then you run the risk that he may lose his next few fights and not even draw fans to the crowd or the PPV. It seems like it would be so much more beneficial to have a large fight purse for the winner and a smaller one for the loser. It would draw alot of the fighters from other orgs because they have the opportunity to make alot of money and they won't be strapped down to a contract. Also, if they are a lame duck then the org won't have to push them on cards until the contract ends. If the main event has a large win purse around the 7 figure mark then you will draw the best fighters in the world. I think they should get rid of the WWE contract method and go to more of a pro boxing method of attracting fighters to their org.
