royce gracie-he helped popularize the sport in the early days
liddell-he became the most recognizable face in mma for a long time
tito ortiz-was pretty much the only thing hat kept ufc floating for a couple years
randy couture-he did the unthinkable when he came back wo the title and actually defended it it proved that age doesnt matter in the sport
fedor-simple hes considered the #1 heavyweight in the world he created alot of interest in pride fc which really helped to globalize mma

With a Focus on "influencial":
Royce - He was the first to introduce BJJ to the world. It was that moment that changed Martial arts ever since.
Saku - He brought TRUE entertainment to the game. Mixing his flashy style with actual technique to really make the fight a "show"
Coleman - Showd that strong wrestling COMBINED with sub defense and the birth of technical GnP opened a new door for wrestlers that is a HUGE part of todays MMA game.
Couture - He brought a level of respectability, civility and honor to the cage that was admirable in a way it never had been before. A true class Act, though not the first, he was the most visible true athlete and champion that the sport needed to have as a "face" to help solidify it;s legitimacy
Chuck - By far teh most popular and well recognized faces of the UFC in our time. Chuck was the one that brought the popularity to the average fan and preformed in a way that everyone could watch and enjoy. He was the one that made the casual fan become interested in the sport as a "Blue Color Hero" of sorts
This is all just my opinion. There are MANY other fighters who have contributed a LOT to the sport but I think... at least at the moment, that these are my top 5.

It's surprising to see lists without Wand. Like him or not, he was the face of Pride for years, which was THE MMA organization for years.

The only reason he isn't on my list is because as it stands today, I think Chuck is still the most recognizable globaly. As much as it sucks, north America is a huge part of that and while most other countries know who chuck is, the US was mostly ignorant of Wandi for the majority of his reign in Pride. But I would certainly acknowledge he was the face of PRIDE in their haydays.
