Useful Information on Eggs

Awesome information, what sucks is that I don't think there is anywhere near me (I imagine many who live near a large city are in the same boat) to get pastured eggs. I've dug around for farms but the closest are grass fed beef/lamb/etc.

How long would they keep in the fridge? I'd have to buy in bulk to make the trips even remotely sane.

I'm not sure about pastured eggs, but normal supermarket eggs can last a good 3 weeks or more in the refrigerator I believe. You'll have to ask a French person if you want to know non-refrigerated times.

I'm lucky I live in a smaller city, so I get market fresh eggs.
