Ultimate Fighting Burgers! Recipe you may love!
Ahh yes, burgers... note, I am not stating HAMBURGERS, but just burgers. Why?
Because my Ultimate Figthing Burgers are made with ground Buffalo aka Bison.
All you have to do is a simple yahoo search on Bison meat and you'll get numerous references praising the high protien low fat count of buffalo meat. You can also buy Buffalo Rib Eye steaks, which are as good as any cut of angus beef.
The taste to me seems to the the big question? I have found Bison to have more flavor than beef and honestly, who doesn't throw seasoning onto their steaks or into their ground meat meals?
The biggest con of Buffalo/Bison is the low fat content as it has less fat, more protien, than white chicken breast. Again, do a yahoo search, it's a proven fact.
So for a lean meat when you got the crave for burgers, what do you do? Marinade the ground bison!
I do nearly all of my shopping at Whole Foods Market. And I found a nice Teriyaki marinade made by "Annie's Naturals" which of course is made nearly of organic ingrediants (Soy Sauce, alittle Sugar, Water, Rice Vinegar, Sesame Oil, Garlic, Seseme Seeds and some Ginger.
Adding a good dose of marinade to ground bison gives it that perfect melt in your mouth finish. And if you prefer something more spicey, I'm sure you can find such marinades if you look for 'em. I actually add alittle more organic granulated Garlic made by the Spice Hunter which is a really top notch spice company.
For the buns, nothing but 100% whole wheat organic buns. I have found 1/3 pound ground bison patties will cook down to the perfect size of the smallest bun, but I always strive to eat organic/whole grains when it comes to breads/cereals.
For burger garnish, you can get non-corn syrup Organic ketchup (and no it doesn't look nor taste like the homemade crap Clark bitches about it in the OG Vacation made by the evil molster Uncle Eddie) a mustard of your choice, I prefer Boetje's which is made in the Rock Island, Illinois area, it's a dutch style, not german and a bit sweeter vs. a german. Pickles are optional but I do love to throw a nice slice of organic yellow onion on the bun.
