First, you do realize that you need fat and consuming a little bit of fat is not going to make you fat, right?
Second, do you think the 87 kcal contained in an 8 oz glass of nonfat milk is going to effect you? You would have to drink a shitload of skim milk for that to make a difference. I mean, if you're drinking a gallon a day that's about 1380 kcal, then I could see your concern, but if you're drinking that many shakes a day you have some serious issues with your diet other than whether you mix your whey with milk or water.
