Get some rice vermicelli (ask the lady at the market) boil it until its soft (won't take long)

Put a little of everything along one part of the rice paper and roll. Fold the sides of the rice paper over the stuffings so that you almost have a rectangle, and roll it like you would roll a ... anythign else. It'll look a lot like a white eggroll. (1,000,000,000 times healthier and better tasting) AND if you tend to have decent vegetables in the house anyway, the asian stuff shouldn't cost you more than 6 dollars. and it will last forever, and feed people multiple times.

Those of you worried about sugar and stuff don't worry about the sauce, just get some of the asian garlic chilli stuff. Its red with a green top and a chicken on the front. Those of you who don't mind a little cheating should add a sweet sauce called Hoisin Sauce. It has a lot of sodium and sugar, but its made from sweet potatoe (which is supposed to have a shitload of its own benefits) crush a bunch of unsalted peanuts and add it to the mix. And use this as a dip.

For an easy cheaper way to try it.....No respectable Vietnamese restaurant will not have these for less than a dollar each. but don't use their sauce. (everyone does it differently) they'll usually have everything i just told you to get right on the side of the table where you can mix it yourself.

AND JUST SO YOU KNOW Vietnamese food in general is almost always all natural, fresh, light and healthy.
one of my faves, i usually eat it with hoisin sauce tho so not as healthy =P

Some recipies i've printed off thanks for sharing everyone.

I have a couple of items here that I enjoy infrequently and are veriations of what other people posted:

Less Guilty Chicken strips:

chicken breast
Egg
crushed corn flakes

Make chicken into strip sized peices dip in whipped egg and coat in crushed corn flakes. bake for 10 minutes-ish. don't make them into nugget size or else the dry out.

same Idea for a chicken parmasian:

Chicken breast dip in egg, coat in italian bread crumbs. bake until done (can be done with some low fat mozza and pasta sauce on top or on its own). This goes well with the sauteed spinich recipe someone posted earlier.

The Italian breadrumbs are awesome. a can of them is just a couple dollars and I've made the parmasian many times now and have plenty left. I've been told that they are good to mix into burgers and meat balls but have yet to try... I've been told to keep them in the freezer or else they go bad.

Another thing to try is all natural Peanut Butter on your rice. I got this from a running magazine. It's freaky sounding but really good, and adds protien and healthy fats on your plate!

Toast 2 pieces of whole wheat toast or one whole wheat english muffin.
Put one egg (break it first...) into a small microwavable bowl and and mix it up with a fork (breaking the yolk), and microwave for about one minute.
When the toast is done, put the egg between the two slices and chow down. Add cheese if you want.

Quick Breakfast II:
Mix one egg and one cup of instant oatmeal. Add milk to achieve desired consistancy and microwave for one to two minutes. Add blueberries or what ever you normally put on your oatmeal.

Quick Lunch:
Mix one can chunk light tuna into a mixed green salad. Add Basalmic Vinegar and Extra Virgin Olive oil to taste.

Quick Dinner:
Cover Baking sheet with aluminum foil and coat lightly with PAM. Place salmon portion(s) on tray. Season with Lime juice, butter, parsley (and any other herbs you like) to taste. Broil for 10 to 12 minutes. Wild rice and sauted asperagus are good side dishes and they can be made while you're waiting for the salmon.

One of the main excuses for not eating healthy is "I don't have time to cook." With that in mind, here are the quickest recipes I can think of. Breakfast is crucial, therefore I posted 2 recipes. The lunch recipe can be made anywhere in about a minute. The dinner recipe takes a bit longer, but it's faster than ordering a pizza and it will look better on you too. Happy eating
awesome info

-about 1/4 of a green bell pepper diced
-Diced tomato equal to bell pepper
-Small spponfull of finely diced Onion
-Sprinkle of Mr.Dash seasoning.
-1 Slice of Fat Free cut in half - American Cheese (optional)

Quickly saute veggies in pan coated lightly with olive oil..or pam whatever.
Beat the veggies with eggs for a couple sec...pour into pan and make omlette..
After completing the omlete,u can place the cheese piece in the omleete and fold it over..

Do any of the big chain stores have Cajun seasoning that isn't packed with salt? I love chicken breasts rolled in the seasoning and grilled but there is enough salt to preserve my heart forever.
