Black Bean Chicken Chili...

1.75 pounds cubed chicken (start cooking in a bit of olive oil with some salt, pepper, chili powder, and cumin)
when chicken is cooked add...
1 tbs thai red curry paste, 1 tbs minced garlic let cook for a few more minutes
throw in one can (14 oz ) of black beans
1 can (24 oz) crushed tomato
1 bottle dark beer(I used a homebrewed oatmeal and coffee stout)
1 cup diced green bell peppers
1/3 cup natural Peanut butter
1tbs cumin
1tsp franks hot sauce
4tbs chili powder
salt and black pepper to taste
cook over medium high heat for about 25 minutes(you could also crock pot it for a while if you have the time to wait.)

I made this last night when I was feeling experimental but didn't want to go to the store, tasted pretty damn good.

Chicken Breast w/salsa

1 4-6 oz chicken breast

1/4 Onion (sliced)

1/2 Orange Pepper (sliced)

3 spoonfuls of salsa

Pinch of Paprika

Put chicken breast on oven tray, lay onions in a railroad track pattern on the chicken
Slather with salsa (enough to cover the top of the chicken)
Lay the orange pepper out around the chicken

Broil at 400F until chicken oozes.

Voila.
