Potato Breakfast that I came up with about a year ago..

Get a huge frying pan

Chop up 1 Potato into slices, put in pre-heated pan

Let potatos cook for about 6 minutes then drop in 2 eggs

then add veggies, onions, whatever

add cheese

bam.

Here's a healthy alternative to eggs and ketchup for breakfast.

Bruschetta
4 cloves garlic, crushed
1/3 cup olive oil
3 tbsp. balsamic vinegar or regular vinegar
1/8 cup chopped fresh basil or 1/2 tsp. dried(parsley if desired)
4-5 medium, ripe tomatoes, peeled, coarsely chopped and drained in a strainer for 20 min.
pinch of freshly ground black pepper

Combine the olive oil, vinegar, basil, and garlic together. Add tomatos and let sit for 15-20 minutes. Add pepper and salt to desired taste.

Poach eggs and serve them on top of multigrain toast, add bruschetta on top.

Done. An easy alternative to crappy hard boiled eggs every morning and lycopene is your friend.

Nice work, Mr East Meets West. Once again, the asian dude whippin' up some crazy morning italiano eggs. Gotta try this one.

I actually came up with a nice sweet barbecue hollandaise sauce that you could drizzle on top of all of this but I can't find the fucking recipe. That is of course if you don't mind a few extra cals.

I tried the bruschetta over eggs last night, but I made a few changes; I didn't have fresh garlic or basil on hand, so I used:

-powdered garlic
-dried crushed basil
-fresh chopped onion

And I forgot to add the balsamic vinegar. But DAMN it was good---and it was even better this morning after a night in the fridge.

Here's an easy one, guys. I make this when I get home from work starved out of my gord.

What you'll need:

Cooking oil
Ground beef (lean as possible)
Spinach (or another leafy green, really)
Salsa
Possibly some cheese (I use cheddar)

Steps:

1) Take 1/4lb. or so of the beef and cook it in a frying pan in olive oil or another cooking oil. Brown it, and break it up, sort of like if you were making meat sauce or something.

2) While its cooking, be picking/washing spinach leaves or just putting pre-prepared spinach/other salad vegetable in a bowl.

3) Once beef is browned, dump it in the bowl.

4) Add cheese if you want, then douse the stuff in home-made or store-bought salsa, whatever you want. Mix it all around and eat it with a fork.

Its a jerry-rigged, healthy taco salad.

Sometimes I leave the vinegar out if I want it a little lighter tasting. Yeah, let it sit over night for even more goodness.

Bacon wrapped Pork Tenderloin - quick and easy

Turkey bacon
Pork Tenderloin
Low-fat Mayo
Horseradish sauce
toothpicks

Cut the tenderloin into 1 inch segments. Wrap each segment of pork with a slice of turkey bacon (or reg bacon) and toothpick to hold in place. The tenderloin is lean so the bacon will provide the fat and flavor. Pan fry both sides for a total of 15 minutes.

Make a dipping sauce with horseradish and low-fat/fat free mayo. They make horseradish mayo combos, but not lowfat.

This is a current favorite in my cooking rotation.]

You can give the pork a little rub down with garlic powder, seasoned salt, basil, oregano, and black pepper before if you'd like. (whatever is in your cupboard that sounds good with pork).

1-Drink 0.75L of Coke, replace the empty space in bottle with Vodka.
2-Swirl it around.
3-Drink it up.
4-Fall Over

Sicilian tuna and potato salad

650 grams bintje or other waxy potatoes
250 grams tinned tuna, drained and broken into pieces
2 hard boiled eggs quartered
1 tablespoon salted capers, rinsed and drained
50 grams anchovy fillets chopped
4 small pickled gherkins chopped
handful black olives, pitted and chopped
juice of 1 lemon
salt flakes and pepper
5 tablespoons olive oil

Method:
Peel the potatoes and boil in salted water until just tender.

Slice thickly, a little more than 1 cm wide.

Place all the ingredients in a mixing bowl and toss well.

Pile into a large serving dish.

For the best flavour and texture, serve while the potato is still warm.
