Any recipes for mashed sweet potatoes?? I have some girls coming over tomorrow and I've never even made regular mashed potatoes so I'm wanting to try some good healthy recipes on them.

I'm usually busy being sarcastic, but I just wanted to say that this thread is amazing. I'd contribute something if my cooking abilities weren't comparable to . . . well, I can't think of any notably terrible cooks.
Edit: actually I can hit you guys up with a badass salsa recipe.
Here's what you need:
-29 oz. can of whole tomatoes, or another large-sized can
-1-2 7oz. cans serrano or jalapeno peppers. More cans for more spice. Serrano peppers for more spice.
-A decent amount of cilantro
-Some salt
-Some onion powder
-Some lime juice
Pretty simple to make.
1) Open the can of tomatoes and dump it in a blender.
2) Open the can(s) of peppers, drain it (with the lid on but cracked helps). Cut the stems off the peppers before you dump the peppers in the blender.
3) Add a decent amount of cilantro leaves (you can always add more later if you want).
4) Add 1 tbsp salt, 1 tbsp onion powder, 2 tbsp lime juice.
5) Puree that motherfucker. You can add more peppers, salt, onion powder, lime juice, or cilantro to taste, and puree that bitch again. The cilantro is really the most hit or miss with most people. Once you got the taste where you want, you've got 1/4 gallon of salsa approximately ready to be put into a sealable container.
Throw it on breakfast burritos, eggs, whatever you might throw bottled hot sauce on. If you're not afraid of a few fried tortilla chips you can grub out with those, too. Much cheaper than bottled hot sauce, too, unless we're talking about louisanna hot sauce or similar brands, perhaps.
Yes, there is a lot of sodium in the recipe. I don't think I've ever tasted a tolerable low-sodium salsa.

Here's a good way to sneak some veggies in:
Make spaghetti sauce, you know... tomato sauce, garlic, onion, olive oil, basil, oregano, however the fuck you like to make it. Then dump in a whole lot of chopped spinach, you can probably dump in more than you think and still have it taste just fine. Then you just throw it on whatever you're eating.
I stir fried chicken tonight... minus the veggies (I'm in need of a grocery store run, all I had was some old broccoli and half a red pepper). Then I just put it in a plastic container and throw 4-5 spoonfuls of my spaghetti sauce/spinach mix on it and grubbed that shit out. Tasted great.

1 Japanese Pumpkin/Kabocha Squash, cubed into chunks.
1 T. Mirin (Sweet cooking sake)
1.5 T Soy Sauce
1.5-2c water, or enough to cover the pumpkin entirely in a pot
Boil the water, toss the squash into the water. When the water reaches boiling again, reduce it to medium-high heat. When you boil away 1/2 the water, toss in the mirin and soy sauce. Simmer for ~15 minutes, or until the pumpkin is fork tender. Enjoy!
Kabocha squash is a winter squash, and is very low gi, filled with an immense array of vitamins and minerals (particularly beta-carotene and potassium). It makes a much healthier substitute for the normal potato, and has a sweet, almost perfumey, flavor.

Elvis' Favorite Post-Workout Gainer Shake
2 scoops of chocolate whey powder
3/4c. Water or Milk
3/4c. Ice
1 Banana
1T. Honey
-OR-
1T. each of Dextrose and Maltodextrin
Handful of Nuts (preferably almonds, peanuts or pecans)
2T. Peanut Butter
1t. Creatine Powder
1 serving Greens Powder
Mix all the above in a blender. Choose between the honey (low gi) or sugar (high gi) based on which side of the insulin-spike fence you're on. Choosing honey will make it more true to the recipe, since, as we all know, The King's favorite food ever were peanut butter, banana and honey sandwiches.
This is loaded with healthy fats, protein and carbs of all sorts. It's also a complete meal replacement too, just swap out chocolate whey for chocolate whey/casein blend (avoid muscle milk, since this will end up a huge fat overload meal). I'd guesstimate around 500 calories for the whole thing, more if you add milk instead of water.
EDIT: Color for Mike and:
Fats are ok post-workout, they will not inhibit protein absorption.

Posted the above two recipes because I just got back from seeing the new Fantastic Four movie. It was a flaming pile of turd, so I figure I give you guys these recipes to make my eyes burn less.
