I'll just write: EAT THE YOLKS YOUNG MAN!!

Also, what are you trying to accomplish with this diet? Any particular goal, or just everyday living?

Along with the lack of veggies mentioned earlier. It seems rather heavy on carbs and low on fat. What kind of training are you doing? Unless your an endurance athlete that seems like alot of non fruit and veggie carbs.

I'd say you're also overdoing it on the protein, unless you weigh upwards of 240 as it is. Definitely eat yolks, and you need a greens supplement if you only eat an apple and a banana daily.

For your morning breafast chop up 1 cup of spinach as fine as you can. If you are making an omelet with those eggs of yours then add the spinach right before you flip the omelet in half. If your scrambling, then just add the chopped spinach whenever.

Meal 3: Steam some broccoli then hit it with splash of Olive Oil and a sprinkle of chopped garlic and some pepper.

Meal 4: throw in a cup of nuked frozen mixed berries.

Meal 6: Get a bag of stir-fry mixed vegetables and nuke a cups worth.

Meal 7: Slice some cucumbers and dice a good size tomato. Drizzle alittle Olive oil and some balsamic vinger over the cucumbers and tomatoes. Hit it with some pepper and your good to go.

Meal 8: any of the previous veg selections or boil 2 cupsof cauliflower till easily fork tender. Drain and use a large spoon or potatoe masher to smash those bastards for all your worth. Once you have them mashed pretty good, swirl in alittle milk and some pepper. Hit it with just a dash of salt if you like for some pseudo-mashed potatoes to go with the chicken and rice.
