In the USA, only about 1 in 30,000 eggs are contaminated with salmonella, so it's really not a major concern for someone who is healthy and in his/her youth. One could actually make the argument that it's healthiest to eat the whites cooked, but the yolks raw.

Correct. Wiki lists the bio-availability of raw eggs at 51% while cooked is 91%. This is due to denaturation from heat.

Shakes are the only thing in which I consume raw eggs, although I never really do that anymore. The reason is the consistency the eggs whites lend (and the added richness of flavor from the yolks). If you want a frothier shake- like egg whites produce- without using them, you can consider throwing in some pectin or some other thickener (the gelling agent used to make Jell-O).
