All Natural, Really tasty Bran Muffins!

Bran Muffin Recipe - All Natural and Delicious!

I know people think of bran as gross, but I have a really tasty Bran muffin recipe which is all natural and really good for you...it really tastes good. You can eat it as is or warm them up and spread some butter in the middle. Great for people on the run, I take um to school with me all the time.

Mix into bowl:

1 cup whole wheat flour or all purpose flour
1.5 cups natural whole wheat Bran
1/2 tsp baking soda
1/2 tsp baking powder
3/4 tsp salt
1/4 cup shortening
1/2 cup brown sugar (well packed)
2 tbsp honey
1 cup milk
2 eggs

Mix all ingredients in one bowl and line muffin pan with paper muffin cups (so they don't stick to muffin pan) and divide contents in bowl into the 12 muffin cups.
set oven 200C (400F), bake muffins for 15 minuits and remove immeadiately after they rise, so they will be tender and not rock hard like most bran muffins.
After they cool, place in air tight container or zip-lock bags so they remain tender.

That is all.

It's a homemade recipe, however if you are on strict calorie diet, sub the brown sugar and honey with Splenda and use 3 egg whites instead of 2 whole eggs. It will be as low fat, carb, calorie as you can get from a whole grain baked good.
