I eat them whole but curious if there is any different in nutrional value from the steam and the 'bush' on brocolli.

You should eat both, but if you had to choose, florets are what you want to eat. The stems are more fibrous, but less micronutritionally dense.

I'd hazard a guess that the florets are more concentrated with antioxidants than the stems. On the other hand, the stems may contain more insoluble fiber.
