Is it unhealthy to lift five days a week?

depends how long uve been lifting
your volume and intensity on those days
what u do on your days off
sleep, nutrition, supplements, etc.

i think high frequency workouts with lower volume works better. but if your training MMA i think its hard to lift 5x a week. id say 4 at the absolute most. and if u were training MMA really hard and often id say weights 2x a week.
