I use the arm in against larger opponents more than a standard guillotine. The finish of an arm in is by using your side to push into their neck to be the other side of the choke...when a guy is bigger, he typically has more neck for me to attack, so I'm a happier guy when thats the case. Try turning the shoulder of the arm wrapped around their neck in towards their spine, this will pull your lat and side in deeper towards their neck. Instead of just squeezing into you scissor like as in a traditional guillotine, pull up slightly so that you turn their neck up into your lat, and boom, you'll get taps left and right with it

In my opinion, normal guillotines and variants like the 10 finger guillotine are easier to finish on large guys. I don't usually go for guillotines, but there's a guy at my gym who is about 35 lbs lighter than me who can consistently tap me with the 10 finger guillotine. If I escape side mount or half guard by going to my knees, he'll instantly have a hand cupping under my chin (which is uncomfortable as it is), and then he'll get the other hand in and finish either by sprawling out, or pulling guard.

80% of me is saying no it wouldnt be a good submission...or at least not the primary submission I would use. If anything it should be used to take advantage of your control over most of his movement. Id be patient and work for something more surefire. In the meantime, while waiting u should definately try to submit him. I personally wouldnt expect a submission tho. W.e works 4 u tho

I only really use it when the guy goes for a leg and I cant stop him but was in like a anaconda choke set up position...I just let him take it and fall back into guard for the arm in guilitine.
