How many days a week for bag work?
I don't have any kind of sparring partner and no one to work focus mitt drills with, but I'm wanting to step up my bag work but I'm worried about overtraining.
Right now I'm lifting Mon, Tue, Thu, Fri. I'm running M, W, F, Sun, sometimes Thu too. I'm only doing bag work on Tue and Thu. I'd like to do more but I'm not sure when or how to fit it into my schedule. I need to have atleast one day out of the week for total rest and typically that's on Saturday. Thanks for any help/advice.

if you cut the running just a bit you could do it everyday and then enjoy the weekend (meaning take the weekend off)

what are you training for? mma, muay thai, boxing? you should increase your bag work to 3-5 times a week.
you can probably(definitely) cut back on lifting weights. what kind of weight lifting are you doing? Just lift one or two times a week. like on tue. and thurs. and just do strength training(deadlifts, squats, clean and press, etc.). then do your bag work 3-5 times a week. As far as the running, you can get away with running every day if you wanted to. it just depends on what kind of running you do. jogging every day is good for your cardio and shoudnt hurt you much, and just do heavy running or sprints 1 or 2 times a week. I was always told that jogging is when you heal your body because your teaching your body to use oxygen effectively(aerobic?). But if your training seriously to fight, then bag work and sparring should be the bulk of your training, along side with running and calithenics. last, weight lifting.
but really it all depends on your goals.

Train weights only at most 3 times a week (twice a week is perfectly good).
Increase the bag work to 3-4 times a week
Stop being a puss and either do runs in the morning, or slow them down and do them as a warm up for your bag work rounds.
If you want to be good at stand up, find a gym though

I dont know what you are training for, but I train MMA and alternate days of striking and grappling. I lift everyday except the weekend. Monday striking (including bag work), Tues grappling, Wen Striking (including bag work), Thurs Grappling, Friday Striking (including bag work), Sat Grappling and Sun I take off...hell even God rests one day a week! I don't do any running unless I am cutting for a fight. I know I should but I just hate how boring it is.

Shit if you can then do it everyday there is no overtraining on a heavybag unless you do it till you are physically ill from exhaustion.
But i'd say no less than 4 times a week, recommend 5-6

Ok, how often has been establish, but for how long? How many rounds? How many minutes per round? etc...

I started doing 5 minute rounds 5 times.
Now I do 5 10 minute rounds. This way I probably will never get too exhausted in a fight
I would reccomend starting at 5 minutes each though
