1 Pound FRESH uncooked Collosul Shrimp
1/2 cup Chopped Orange and Yellow bell peppers. Chopped to preference of size
1 Italian pepper chopped to preference
1 Thai Pepper chopped to preference
3 gloves of minced fresh garlic
1 bag of Fresh Organic baby spinach
1 Cup Long-Grain basmati Rice
1. Crush red pepper, black pepper, Garlic and onion powder (no salt added)
A pinch of Sea Salt
6 cups water
1 Tablespoon of Extra Virgin Olive Oil
Before cooking in a mixing bowl add shrimp and cover with garlic powder, onion powder and sea salt. Rub into shrimp until all are coated nicely with garlic and onion powder, then add crushed red pepper to preference. If you can get the peppermill grinder for crushed red pepper that works best. Then add crushed black pepper to preference as well. Shrimp should be a nice blend of colors.
1. In a medium Sauce pan add 6 cups of water and set to boil on high heat. Once water is boiling stir in 1 cup of basmati rice and reduce to low heat for 5 minutes (longer for softer texture).
2. In a large wok/Skillet add 1 tablespoon of extra virgin olive oil and heat on medium. Once oil appears to thin add in the minced garlic and coat with the olive oil.
3. Once oil begins to bubble slighly, reduce heat a tad and add shrimp.
4. Be sure to coat the shrimp with the olive oil and garlic.
5. As shrimp is going remove rice from heat and drain of all water. (test before doing so to check the texture. Bamati is best with a big of a firmer texture. Drain all water and set on side.
6. Once shrimp have cooked nicely stir in all peppers and cook on medium stirring frequently. Cover and let simmer for 3 minutes.
7. Remove cover and add baby 2-3 cups of baby spinach. Once spinach cooks it literally shrinks to nothing so you might not want to be stingy with it. Once spinach is added, you might want to ad a tiny bit more olive oil and continue to stir frenquently until the spinach has cooked completely.
8. Once spinach is done, stir in rice and mix well, cover and let simmer on low heat for 5 minutes.
Remove and serve. Feeds about 3 people. Hopefully my instructions are good enough. Ever since cooking this once it has become not only a favorite of mine but my wife as well. I'm pretty much and organic foods nut so all vegetables and what not are organic, but of course you don't have to be extreme.
