That's what I use, it works just fine for me. Don't like it? try this one:
Olive oil (or bacon grease if you're cool)
12 ounces finely chopped corned beef
2 whole potatoes cooked and grated
1/2 cup chopped mixed peppers (bell peppers, and a seeded habanero for some heat)
1/2 cup chopped red onions
1/2 cup chopped scallions
1 tablespoon chopped fresh parsley leaves
1 tablespoon chopped fresh rosemary leaves
1/2 teaspoon salt
1/2 teaspoon fresh pepper
Sweat onions, scallions, and peppers in olive oil (or bacon grease) until soft. you don't need to drown them, just use a little oil. Mix all the ingredients together and saute in a pan until golden brown, about 8 minutes.
