On that grip for the cross collar, the only thing I've seen different in the way that Roger does it is the grip with his second hand. He posts on his elbow but turns his hand back, putting one thumb in around the middle of the neck. Then he throws his arm over their head (like a clock choke or the oft used but rarely finished paper cutter from side...that's the best way I can think to describe it) coming to the cross collar position.

I know the exact technique you are referring to and I added that as a variation when I was teaching it, but unfortunately didn't get it on video.
Also an extra detail on that variation to get the space is to pull up on the first grip to lift the guys head off the ground and then push the lapel back to the ground and you will create a space behind their head to get the thumb in. I actually like the way roger does it better, but it's harder to get that second grip in and it is possible to finish with only the shoulder grip as per demian maia's instructional... but if you get the other grip with the thumb in there is much more leverage for the choke.
