Don't care, if you think kettlebells, particularly one kettlebell, will cover "all of my functional-training purposes", youu don't know what you're talking about. If you're going to use kettlebells as an additional resistance tool then that's fine, but don't go thinking that it's somehow a better tool than any other tool.
16kg seems to be pretty popular for higher rep swings and snatch stuff, but it's hard to say without knowing how you're going to use it, or what your lifting ability is.
