I believe "Muscle-Shark" was given to Sean Sherk by the Japanese fans in Pride. The Katakan for his last name is apparently the same character as the word Shark, and the muscle part is pretty self explanatory...

Akihiro Gono used to be nicknamed "Lights Out" in reference to James Toney, one of Gono's favorite boxer who shared that nickname...

Sakuraba was known as the "Gracie hunter" for his consecutive victories over members of the Gracie family...
