Lee's witnessed and documented fights seem to be elusive at best (with one or two exceptions). But the thing to remember is that he is one of the better-known proponents of mixed martial arts (not sport MMA per se) in history.
That said, there were others before him, especially in the "real combatives" arena (e.g. Fairbairn). In fact there were probably millions...but he helped to bring the "absorb what is useful" philosophy to modern martial arts, even if he didn't mean "mix up a bunch of traditional martial arts to find a new one," (but in practice that's what it comes down to, doesn't it?).
