I'm not 100% sure if this applies to most of the fighters in Thailand or fighting Muay Thai but my MT coach (who's fought many years in Thailand) told me this about weight cutting:
If you have a upcomming fight then you train harder and spend more time doing cardio and sparring. Then on the day of the fight you should weigh around the weight you will be fighting at, if you're over that weight (often being only 1-4 lbs) then you take it off just before the fight.
Im not sure if this is the way all fighters do it but according to my coach you don't see these monster cuts (10-20lbs) before a fight!
