here's one for you hawaii people:
the ahi you buy in stores and in restaurants are usually frozen and treated; it gives the fish it's nice pink color, and actually gives it a firmer texture when you bite into it (raw/poke). "fresh fish" means that it might have been sitting on ice for up to thirty days before it even got to the store, is usually browner in color, and has a mushier texture (albeit a buttery-er flavor to some). treated fish is usually cheaper and usually not from around hawaii.
