My grappling staple is high-elevation double legs. I shoot them from a distance, from the clinch, I shoot singles to set up doubles, if they sprawl, I do a fireman's carry. If I can't shoot a regular double, I shoot a very low double (like, to their shin). Sometimes I may shoot a double, but take their back instead of taking them down.

My suggestion is to get good at one or two takedowns and make them your "go-to" moves. I've taken judo and I'm very comfortable doing a lot of their throws, but I find myself having almost too many options to choose from, to decide in the midst of a match. If I cannot shoot a double, or if I train something else, that's fine. But a double leg is pretty much my bread and butter.
