Train in arnis but have never had a knife pulled on me. However, another student who delivers pizzas did. He had someone try to stab him and he was able to disarm him and run off. If you do train in arts such as arnis/eskrima/kali you will get a good base of how to defend yourself against a knife. However if the guy has skill, the chances of of you surviving arent good. You'll for sure at least get cut.
