Here's an easy one, guys. I make this when I get home from work starved out of my gord.
What you'll need:
Cooking oil
Ground beef (lean as possible)
Spinach (or another leafy green, really)
Salsa
Possibly some cheese (I use cheddar)
Steps:
1) Take 1/4lb. or so of the beef and cook it in a frying pan in olive oil or another cooking oil. Brown it, and break it up, sort of like if you were making meat sauce or something.
2) While its cooking, be picking/washing spinach leaves or just putting pre-prepared spinach/other salad vegetable in a bowl.
3) Once beef is browned, dump it in the bowl.
4) Add cheese if you want, then douse the stuff in home-made or store-bought salsa, whatever you want. Mix it all around and eat it with a fork.
Its a jerry-rigged, healthy taco salad.
