Here's a healthy alternative to eggs and ketchup for breakfast.
Bruschetta
4 cloves garlic, crushed
1/3 cup olive oil
3 tbsp. balsamic vinegar or regular vinegar
1/8 cup chopped fresh basil or 1/2 tsp. dried(parsley if desired)
4-5 medium, ripe tomatoes, peeled, coarsely chopped and drained in a strainer for 20 min.
pinch of freshly ground black pepper
Combine the olive oil, vinegar, basil, and garlic together. Add tomatos and let sit for 15-20 minutes. Add pepper and salt to desired taste.
Poach eggs and serve them on top of multigrain toast, add bruschetta on top.
Done. An easy alternative to crappy hard boiled eggs every morning and lycopene is your friend.
