Agreed that you run the risk of watering down the talent and giving everyone a belt with too many classes.
But 155 is not light enough to be the lightest weight class. A 155 pounder would be a Middleweight in boxing and one of the middle weights in wrestling. Even the average in-shape American (the 10% that are) walks around at around 175 pound--enough to cut down to 155. The average South American, East African or Asian? They probably walk around at 140 in shape, without cutting weight. So if you want that sport to grow and have competitors from all over the world (like boxing or wrestling) you can't put 50% of the world at a disadvantage by forcing them to fight outside of their natural weight class.
