It's not like the UFC had much of a choice which TV station they signed with. At the time it was probably seen in the TV industry as a gamble for Spike to devote so much air time to such a "niche" sport.
After the success and ratings the UFC is getting once their contract is up with SpikeTV i'm sure if they wanted to they could have a bunch of different stations begging them to sign with them.
